Summary :

Good Hope Cannery is a historic and remote wilderness lodge in Rivers Inlet, BC. The lodge is operational during the summer months for guests to experience fishing, water sports, and wildlife touring. Good Hope provides guests with an all-inclusive relaxing experience within the rugged, beautiful, and isolated setting of Rivers Inlet. The lodge is accessible by float plane or boat and provides room and board to staff.

We take our food seriously and source the freshest, best ingredients, including organic meats, produce and fruits.

The Breakfast Cook is an experienced cook position ideally suited for a well-rounded, versatile chef, or an experienced line cook, whom is able to prepare and serve meals, for 30 to 40 people. This is a flexible position, with final job description and schedule determined by your strengths.

This is a full time seasonal position in which the employee will be required to work full-time, weekends, holidays, days and early mornings. The season tentatively starts July 1, 2020 and ends September 12, 2020. Employees are expected to commit to a full season upon contract signing, and understand they will work and live at River’s Inlet, Good Hope Cannery for the full season, 7 days a week. Standard work hours are 10 hour days starting at approximately 3:00am to 1:00pm.

Physical demands include:

Standing for long periods of time, reaching, bending, squats and lifts, combination of bending, crouching, and kneeling, walking.

Carries plates, lifts glass racks and boxes weighing up to 50 pounds up to 20 times per shift.

Some exposure to smoke, steam, high temperatures and humidity.

Comfortable living and working in a remote location for extended period of time.

Requirements:

Strong knowledge of vegan & gluten-free cooking and baking or previous experience working in a vegan/gluten free kitchen.

Strong communication skills, in a fast pace work environment.

Strong interpersonal skills. Able to communicate with individuals from diverse backgrounds.

Organizational skills with the ability to be organized in a changing environment.

Ability to maintain a calm professional demeanour during periods of uncertainty or crisis.

Safe Food Handling certificate, Food Safe Level 1 and 2 Certificates.

WHMIS Certificate.

Full-Service Resort or Restaurant Kitchen Experience is desired.

A minimum of 3-5 years cooking experience, preferably in a resort environment, or fine dining.

Strong creative cooking skills, of a variety of breakfast recipes.

Knowledge of farm to table cooking with a passion for local ingredients and clean cooking

Time management skills to balance multiple priorities.

Job responsibilities include, but are not limited to:

Preparing and cooking breakfast recipes daily for 30-40 guests and staff daily.

Organize and manage breakfast buffet.

Plate dishes for fine dining presentation.

Assist Head Chef.

Assist Lunch Cook.

Preparing, seasoning and cooking foods such as soups, salad, meats, fish, gravies, vegetables, desserts, sauces and casseroles.

Preparing special diets for customers with food allergies or intolerances.

Stock, date, rotate and check temperature of products.

Taste products, quality control, follow menus, estimate food requirements.

Check production and keep records in order to accurately plan production requirements and requisition supplies and equipment as needed.

Assists with overseeing menu planning.

Keep track of product levels and suggest to the Kitchen manager a purchase/pull list for all items for your station.

Maintain inventory and records of food, supplies and equipment.

Inspect kitchens and food service areas for cleanliness, safety, and proper kitchen maintenance.

Responsible for cleanliness of tools and work station, all knives and instruments, kitchen equipment and cooking utensils.

Take initiative in cleaning tasks and cleaning task schedule.

Know and practice good hygiene and food safe procedures.

Must be very organized with their time and has dedication to their position.

Work with minimal supervision to prepare breakfast.

Ability to work as a team member, in a remote resort, with minimal staff.

Assists in an entire team effort for the success of the lodge and guest satisfaction.

All other duties as assigned, which may include other departments.

Assets for the Position:

Completion of college/CEGEP/vocational or technical training

Red Seal Program

Baking experience

Certificate in CPR and Occupational First Aid Level 3 certificate

Salary: $175-$225 Day Rate TBD based on experience
