Job Description

Operational Excellence


To wear a clean, pressed and
correctly worn uniform including name badge everyday

To wear all appropriate and company
regulated PPE’s, including but not limited to non-slip shoes and cut
resistant glove/s

Follow all Quality Assurance
Guidelines for personal cleanliness and hygiene

Follow all Quality Assurance
Guidelines for workplace cleanliness


Follow all guidelines for food
preparation; recipe adherence;
brand standard adherence

To receive stock, store and check
for quality and quantity; ensuring that all stock is dated and rotated

To prepare all necessary food items
in a timely manner

To operate all necessary equipment
required to produce items in a safe manner, and to standard
All other duties
assigned by management


To serve customers with visually
appealing products, hot/cold food and beverages during service times

To maintain Brand Standards, whether
internal or external brands.

To operate all equipment required in
service in a safe manner and to standard

To attend appropriate Brand
Standards Training

To accept payment and give change to
customers, including operating a till in accordance to all cash handling

To ensure all workspaces, displays,
counters, sneeze guards and seating areas (if applicable) are clean and
free of debris

To observe and comply with all
company and unit procedures relating to cash handling and security; reporting
any issues to your line manager

All other duties
assigned by management

General Housekeeping

To ensure work stations are kept
clean, washed and sanitized.

To ensure all necessary equipment
used in the preparation for and service of customers is kept clean, washed
and sanitized

To ensure all garbage and cardboard
is deposited in the assigned areas

To maintain cleanliness of floors,
swept, wet mopped and dry mopped as appropriate

All other duties
assigned by management

Job Specific Responsibilities


Preparation of
both hot and cold food

Carry out all
duties required to maintain meal services (Breakfast, lunch and dinner)
(prepping and batch cooking)

Prepare items for
next day’s meal services (recipe ready carts)

Recipe Adherence

Menu Development,
Menu cycle adherence

knowledge of HACCP and the 7 steps of the flow of food, appropriate record
keeping at Critical Control Points

Ensuring all
required Quality Assurance paperwork is filled out and Quality Assurance
regulations are adhered to

compliance with food safety standards and health inspection legislation to
minimize and/or eliminate safety issues, complaints and ensures safe production
of food. This includes but not limited
to the cleaning and sanitizing of work area and equipment; re-plating, wrapping
and storing left over food items to avoid spoilage.

Knowledge of internal cooking temperatures and ability to ensure potentially
hazardous foods are cooked from a raw state to a cooked stated to the
appropriate temperature of specific food item

Works with
management, on theme night menus and provides assistance with Catering Services
as requested.

Knowledge of safe
operation of specific equipment such as but not limited to; deep fryers, grill,
char-broiler, Rational Oven, Convection Oven, Tilt Skillet, Steam kettles,
Buffalo chopper, Proofer, Speed oven, Salamadaire, Food Processor

Help with all
food prep including but not limited to webtrition, menutainment, trattoria, and

Ensuring equipment is being cleaned regularly as per cleaning schedule

Responsible for meal services and overall hot food service

Assist with any
reasonable task as assigned by a supervisor

All other duties
assigned by management


Must have previous industrial cooking experience.

Large quantity cooking is an asset. (300-500 clients)

Must be able to work weekends/evening/early morning

Must be flexible
